Apple Pie Oatmeal Cookie
These oatmeal cookies are full of flavor, incredibly soft and chewy. Great for a healthy treat, anytime of the day! But perfect for the fall season.

- 1 cup Old fashioned oats
- 1 1/2 tsp Baking powder
- 1/8 tsp Salt
- 1 unit Egg Room Temperature
- 1/2 cup Agave (or raw honey)
- 3/4 3/4 Whole Wheat (or gluten-free flour)
- 1 1/2 1 1/2 Ground Cinnamon
- 2 tsp Coconut Oil (or Unsalted Butter), Melted
- 1 tsp Vanilla Extract
- 1 cup Red Apple finely diced
Preheat oven to 325 degrees
Melt 2 teaspoon of butter
Warm 1 egg to room temperature
Finely dice 1 cup of red apple
Whisk together the oats, flour, baking powder, cinnamon, and salt in a medium bowl. In a separate bowl, whisk together the coconut oil or butter and vanilla. Stir in the agave or raw honey. Add in the flour mixture, stirring just until incorporated. Fold in the apple.
Chill for 30 minutes.
Preheat the oven to 325 degrees and line a baking sheet with parchment paper or a silicon baking mat.
Drop the cookie dough into 15 rounded scoops onto the prepared sheet, flatten slightly. Bake for 13-15 minutes. Cool on the pan for 10 minutes before turning out onto a wire rack.
