Sheet Pan Salmon & Broccoli with Lemon, Thyme and Ginger

  • about 2-inches, sliced thinly

  • pre-heated to 425F


  1. Preheat oven to 425F
  2. Cut broccoli florets
  3. Cut red bell-pepper into chunks
  4. Cut lemmon into halfs
  5. Slice ginger thinly


  1. Line sheep pan with parchment paper. Spray with non-stick cooking spray.
  2. Season the salmon with salt and papper. Place in a single layer on the sheet pan.
  3. Toss togetehr the broccoli, red bell-peppers, lemons, salt, and pepper. Transfer to sheet pan in a separate section from salmon.
  4. Sprinkle springs of thyme and sliced ginger over the salmon and vegetables.
  5. Place teh sheet pan in the oven and cook for 10 to 12 minutes, or until the salmon reaches an internal temperature of 145-degrees Fahrenheit. Vegetables will be slightly charred.
  6. For 1 portion, place 1 filet of salmon, 1-cup of broccoli, and a 1/4 fo the bell-pepper chunks, then squeeze 1/2 of a lemon over everything. Thyme and ginger slices can be discarded.
