Mediterranean Chicken Salad



For Chicken:

1 ¾ lbs. boneless, skinless chicken breast

1 ½ tbsp butter, melted

¼ tsp each (or less) salt & pepper

For Mediterranean Salad:

6 cups romaine lettuce, torn or roughly chopped

1 cup sliced cucumber

1 pint cherry tomatoes, halved

10 pitted Kalamata olives

1/3 cup reduced-fat feta cheese

1 small lemon, juiced (about 2 tbsp lemon juice)

¼ tsp each (or less) salt & pepper


  1. Pre-heat grill or oven to 350 degrees F.

  2. Season chicken with butter, salt, and black pepper.

  3. Grill or roast chicken until it reaches an internal temperature of 165 degrees F, about 25 minutes. Once chicken breasts are cooked, remove and set aside to rest (about 5 minutes) before slicing.

  4. Meanwhile, combine all of the salad ingredients and toss well.

  5. Serve chicken with Mediterranean salad.
