Plantain Pancakes

These plantain pancakes are very nutritious, containing a variety of vitamins, protein, minerals and fiber. Simple to make and delicious that everyone will love!


2-3 plantains (ripe)

1 cup almond milk

1-2 eggs

1 Tsp vanilla

1-2 Tsp baking powder

1 Tsp salt

1 1/2 cup powder oats (blended)

1-2 tbsp flax seed

1-2 tbsp chia seed

1-2 scoops of vital collagen powder (optional)


  1. Put raw oats in a blender to make oats a consistency of a powder form.

  2. Add plantains in food processor/blender and bend.

  3. Add rest of the ingredients (milk, eggs, vanilla, baking powder, salt, oats, flax, chia and collagen) and blend.

  4. Spray skillet with olive or coconut oil and heat to medium hot.

  5. Pour a scoop worth into skillet and cook until bubbling.

  6. Flip and cook on other side for a few minutes.

  7. Place on plate and serve immediately.
