So I wasn't in the mood for another salad and wanted to change up my meals up. I tried this Portobello Mushroom recipe and loved it. I used baby mushrooms which made it more "bite-size" friendly. This recipe can be made ahead of time and used as snacks! Check it out!
6 baby portobello mushrooms (washed, dried thoroughly with paper towel and stems removed)
1/2 cup cherry tomatmes sliced
Oregano (to taste)
Pepper (to taste)
Preheat oven to broil.
Coat the mushrooms with butter and lay on cooking sheet up.
Fill each mushroom with goat cheese and cherry tomatoes. Sprinkle oregano on top.
Place in oven for about 8 minutes or until brown on top.
Once done, pull out and let cool. Sprinkle pepper to taste then serve!
