Who said that you have to have eggs for breakfast?
This sweet potato breakfast bowl is quick and easy, a bit naturally sweet, packed with protein, fiber and healthy fats. It's strangely delicious, considering how simple the recipe is!
1 whole sweet potato
1 tbsp butter
1/4 tsp cinnamon
1 pinch sea salt
1 tbsp chia seed
1 tbsp hemp seed
Steam your sweet potato in the Insta Pot (if you have it) or in a regular pot. Wash and prick all over with a fork. Place trivet in Insta Pot and add a cup of water. Cook on manual at high pressure for 16 minutes then quick release. If using a regular pot, put steam try inside and add water. Add potato until soft.
Make sure your sweet potato is very hot. Peel sweet potato and mash in a bowl.
In the same bowl, combine the eggs. Mash, moving pretty quickly until the sweet potato is smooth and the mixture is totally combined.
Add in the butter, cinnamon and salt. Mash again until very smooth.
Place mixture in the microwave for 1 minute.
Taste and add more salt or cinnamon, if desired.
Top with toppings and serve or put split into two Tupperware and store in the frig until ready to eat.
