Pumpkin Chocolate Chip Protein Muffins
These muffins are great for a grab-n-go breakfast or anytime snack. Made with whole ingredients, making it nutritious but also delicious!

- 1 Cup Old Fashioned Oats
- 2 Each Large Eggs
- 1 tsp Cinnamon
- 1 pinch Salt
- 1 Cups Pumpkin Puree
- 1/2 cups Protein Powder
- 1 tsp Baking Powder
- 1/2 cup Chocolate Chips dark
- 1 cup Greek Yogurt
- 1 tbsp Pumpkin Pie Spice
- 1/2 tsp Baking Soda
Add the oats to a Vitamix, blender or food processor and process until a flour form (about 20 seconds).
Add the pumpkin, Greek yogurt, eggs, protein powder, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt. Blend again until well combined. Try not to overprocess it if you can. Stir in the chocolate chips.
Distribute into 12 silicon muffin lines (or regular muffin lines that are greased with coconut oil spray)
Bake for about 25 to 30 minutes or until a toothpick comes out clean. Less than 30 minutes will be a little moister. Enjoy!
