Ingredients

1 head of cauliflower, cut into florets

¾ cup chickpea flour or whole wheat all-purpose flour

¾ cup unsweetened almond milk

¼ cup water

2 tsp garlic powder

2 tsp paprika powder

Salt and black pepper

1 cup Primal Kitchen Buffalo Sauce

1 tbsp olive oil

Instructions

  1. Preheat oven to 350 degrees.

  2. Cut the cauliflower into bite-sized florets.

  3. In a large bowl, combine flour, milk, water, garlic powder, paprika powder, salt, and black pepper. Stir to well combined.

  4. Dip the florets into the batter, so they’re completely coated.

  5. Line a baking sheet with parchment paper and lay the cauliflower florets on the baking sheet. Make sure that they lay flat and not on top of each other. Bake for 25 minutes.

  6. Combine the Buffalo Sauce with a tbsp of olive oil in a small bowl.

  7. Pull out the florets and evenly coat them with the buffalo sauce from all sides by stirring them in a few times.

  8. Put the coated florets back on the baking sheet. Bake again for another 20 minutes.

  9. When done, remove from oven and let cool for a new minute. Optional, sprinkle some fresh chopped green onions and fresh chopped parsley on top. Pair with your favorite ranch or wing dip.
