Tuna Salad Cucumber Boats

This quick and easy snack is easy for on the go, great to make ahead of time, and have during the week.


Prep Time: 5 minutes | Total Time: 5 minutes 

Serving: 4 (1 cucumber = 1 serving)

Ingredients

4 medium cucumbers

4 5-oz can wild albacore tuna in water, drained

4 celery stalks, finely diced

1 cup plain Greek yogurt (2-5%)

½ red onion, finely diced

2 tsp Dijon mustard

Salt and pepper, to taste

½ tsp dried dill

Instructions

  1. Slice the cucumber down the middle lengthwise. Using a spoon, gently scoop out the insides. Discard (or compost) the scooped seeds and set the remaining cucumber halves aside.

  1. In a medium-sized bowl, add the tuna. Using a fork, gently mash the tuna until it is flaked. Add the celery, Greek yogurt, onion, mustard, salt, pepper and dill. Mix well.

  2. Scoop the tuna salad into each cucumber half. Enjoy immediately or store in a glass container and enjoy at a later time.
