Turkey Chili

This chili is delicious, hearty, healthy, and cozy for those sweater-weather days. It fits any meal and is great for batch cooking that the whole family will love.

Ingredients

1 lb ground turkey or chicken

1-2 tbsp extra virgin olive oil

1 yellow onion, chopped

1 medium red bell pepper, chopped

2 garlic cloves, minced

4 tbsp chili powder

1 tsp ground cumin

¼ tsp ground cinnamon

½ tsp ground black pepper

½ tsp salt

½ tsp paprika

1 14oz can crushed tomatoes, juice and all

1 14oz can diced tomatoes, juice and all

1 tsp oregano

¼ tsp cayenne pepper (optional)

1 bay leaf

1 cup chicken broth or stock (low sodium)

1 14oz can black beans or dark red kidney beans, rinsed and drained

Toppings: cheese, avocado, cilantro, sour cream

Instructions

  1. Place oil in a large pot or Dutch oven and place over medium-high heat. Add in onion, garlic, and red pepper. Sauté for 5-7 minutes, stirring frequently.

  2. Add ground protein and break up the meat; cook until no pink. Next, add chili powder, cumin, cinnamon, salt, pepper, and paprika. Still to combine letting spices cook for a minute or so.

  3. Add crushed tomatoes, diced tomatoes, oregano, cayenne, bay leaf and broth. Stir to combine, reduce heat to medium-low, and simmer for 15 minutes.
