Warm Fall Salad

This warm salad is a perfect lunch or dinner option on a chilly autumn day. It’s made with whole food ingredients, making it delicious!

Ingredients

2 cups cubed sweet potatoes Coconut or avocado cooking spray 1 tbsp olive oil
4 cup kale, roughly chopped
1 carrot, ribboned or shredded
1 large chicken breast
1⁄2 tsp salt
1⁄4 tsp ground black pepper
1 granny smith apple, chopped
3 tbsp slivered almonds
Dressing
1⁄4 cup almond butter
2 tbsp coconut aminos
1⁄2 tsp ground ginger
2 tbsp apple cider vinegar
1 tsp coconut milk
1⁄2 tsp cayenne pepper (optional)

Instructions

  1. Preheat the oven to 400 degrees. Toss the cubed sweet potato with avocado or coconut oil spray and arrange in a single layer on a parchment paper-lined baking sheet. Bake for 25 to 30 minutes or until sweet potatoes are tender and brown at the edges, stirring them halfway through. Remove from oven, let cool then transfer into a large mixing bowl.

  2. Prepare kale for the oven. Lay on the same baking sheet used to bake the sweet potatoes, and spray with avocado or coconut oil spray. Place inside the same oven and bake for about 10 minutes or until wilted and crisped at the edges. Transfer to the same bowl as the sweet potatoes.

  3. Use a vegetable peeler to ribbon the carrot by “peeling” the carrot lengthwise down or shredding the carrot. Place carrot ribbon or shreds into the same mixing bowl.

  4. Chop and add the apple into the mixing bowl.

  5. Add 1 tbsp of olive oil into a skillet and place over medium-high heat stovetop. Cut up the chicken into uniform thin slices and season with salt and pepper. Add the chicken to the skillet and cook for 10 or so minutes until cooked thoroughly.

  6. For the dressing, combine all ingredients in a medium bowl and whisk until smooth. Add additional coconut milk, as necessary, to thin out the dressing to your liking.

  7. Toss the kale, sweet potato, carrot, and apple together. Add chicken, dressing, and mix. Serve on a plate or bowl, enjoy immediately.
