Start your morning off right with these delicious Greek Yogurt Protein Pancakes! Quick and easy to make, perfect for the whole family.

Prep time: 10 min Cook time: 10 mins Total time: 30 mins

Servings: 4

Ingredients:

  • 1 ½ cups organic all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 2 tbsp brown sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ¾ cup plain Greek yogurt (I use Fage 5%)

  • 2/3 cup unsweetened almond milk

  • ½ cup fresh blueberries (optional)

Instructions:

  1. Preheat a large griddle or frying pan over low to medium heat.

  2. In one bowl whisk together the dry ingredients: flour, baking powder, baking soda, salt, and sugar.

  3. In another bowl whisk together the eggs first. Once the eggs are mixed well, whisk in the vanilla extract, yogurt, and then milk. You should end with a creamy consistency.

  4. Gently incorporate the wet ingredients into the dry mixture with a rubber spatula or wooden spoon. Then add the fresh blueberries if desired. The batter will have a slightly lumpy texture.

  5. Lightly coat your frying pan or griddle with olive oil spray or oil.

  6. For each pancake, pour ¼ cup of batter onto the pan/griddle. Cook for 2-3 minutes, or until a few air bubbles form on the uncooked side. Flip the pancake and cook for an additional 2-3 minutes on the other side, or until it turns golden brown.

  7. Repeat for each pancake.

  8. Serve warm with your choice of toppings like fruit, nut butter, or organic maple syrup.
